Week Two
We are coming out of a full weekend working, so our plans involve some easier and pre-made options.
Breakfast – Costco muffins
Lunch – Costco chicken salad and croissants
Dinners:
- Sunday: Costco Birria tacos – first time trying these and they were delicious!
- Monday: Pasta with meat sauce + garlic bread
- Tuesday: Loaded baked potatoes – cubed ham, broccoli, shredded cheese, top the tator, crispy onion strings.
- Wednesday: Shawarma Bowls, (prepped day before)
- Thursday: Potato Leek Soup + focaccia bread
- Friday: Grab & go takeout (we have a swim meet to get to!)
- Saturday: Turkey breast + stuffing
Kitchen Must Haves – Another week with a blended soup, so you know I used our immersion blender! My husband also prefers to make his own pasta sauce using a large can of San Marzano tomatoes and blending them with Italian seasoning.
Week Three
Breakfast: Belgian waffles and sausages
Lunch: Pepperoni & cheese tortilla roll ups
Dinners:
- Sunday: Chicken wings & fries – cooked the wings on the smoker and tossed in our favorite sauces
- Monday: Taco lasagna (made in advance)
- Tuesday: Italian penicillin soup
- Wednesday: Chicken thighs over rice – chicken seasoned with Cluckerdust and air fried
- Thursday: Roast beef sandwiches – tri-tip beef from the smoker served with chimichurri
- Friday: Halloween – we have an empty nest, date night?
- Saturday: Reuben sandwiches
