Mexican Lasagna is a twist on Italian lasagna that’s perfect for family dinners. With its layers of pasta, meat sauce, refried beans, sour cream, and gooey cheese, it’s sure to please everyone at the table. Let’s dive into a simple yet delicious recipe!

Ingredients You’ll Need

  • 1 box oven ready lasagna noodles
  • 1 pound of ground beef
  • 1 jar of salsa, 28 oz
  • 1 can of refried beans
  • 1 – 16 oz container of sour cream (or cottage cheese if you prefer)
  • 2 cups of shredded cheddar/jack cheese
  • Salt, pepper, onion powder, garlic powder to taste

Steps to Create Your Lasagna

1. Begin by preheating your oven to 375°F (190°C).

2. In a large skillet, brown the ground beef over medium heat and season with seasonings. Drain the fat and add salsa. Add one cup of water. Let it simmer for about 10 minutes.

3. Now it’s time to layer! In a baking dish, spread a thin layer of meat sauce, then a layer of noodles, refried beans, sour cream, and a sprinkle of cheddar/jack. Repeat these layers 2 more times, until all ingredients are used, finishing with cheese on top.

6. Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes or until golden and bubbly. Let it cool slightly before serving.
